SHORTBREAD

INGREDIENTS
200g unsalted butter
100g sugar
300g plain flour
tsp of milk (only if mixture is dry)






Makes 18.

METHOD
1. Leave butter out for ten mins. (to soften)
2. Pre-heat oven to 160c/gas 3.
3. Add sugar to bowl.
4. Cut butter into cubes and add to sugar.
5. Mix well.
6. Add flour.
7. At this point its better to use hands. (for mixing)
8. Once all mixed together try not to handle mixture. (it will go too soft                                                                              as your hands will                                                                                 melt the butter)
9. Roll out and cut into shapes.
10. Place onto a butter greased baking tray.
11. Put in the oven for 15-20 mins.
12. Enjoy!





LENTIL SOUP

INGREDIENTS
100g red lentils
1 medium sized courgette
1 large tomato
1 large carrot
OXO cube
200ml boiling water
1 red pepper
Oregano


For 2 people.

METHOD
1. Brown the onions in a large saucepan.
2. In another pan cook the lentils in water for 5 mins.
3. Add the finely chopped carrot and red pepper.
4. Add the courgette and tomato with the oregano.
5. Crumble an OXO cube onto the veg.
6. Add the water.
7. Now add the cooked lentils and stir.
8. After boiling point leave to simmer for 20 mins.
9. Stirring every 5 mins
10. Enjoy
